salmon-colored dreams


my new food network crush may or may not be on the host of 5 ingredient fix,claire robinson. she's adorable, i love her different aprons that she wears every show, oh and her food looks pretty fantastic considering there are only 5 things in each dish = easy on the budget. in any case, i was inspired to make her herb crusted salmon last night. it was dreamy.

i should note though that this is my spin (hence a few extra ingredients), and this recipe will only serve one. depressing i know, but i thoroughly enjoyed myself so yappy shutty!

herb crusted salmon
handful of italian parsley
2 green onions
1/2 cup of seasoned breadcrumbs
handful of dill
1/2 stick of butter, melted
1 salmon filet (6 oz.)


Preheat the oven to 400 degrees F.
Blend the italian parsley and green onions with bread crumbs, salt and pepper, to taste, in a food processor, pulsing in the dill last. Remove and stir in just enough melted butter to create the consistency of wet sand.
Pat the salmon dry and season on all sides with salt and pepper, to taste. Heat 1 tablespoon of butter in a large saute pan and sear the salmon, flesh side down, over medium-high heat, about 2 minutes. Flip and top the fillet with the herb/crumb mixture. Put the pan in the oven and bake until the fish flakes with a fork. About 8 to 12 minutes.

i also roasted up some new potatoes with a yummy mix of shallots, butter, mozarella, salt & pepper of course and then some dill when they came out of the oven. so much salty goodness on one plate! oh, and then I had some blood orange italian soda with my delicious, salmon pink themed dinner :)
